A combi oven going down mid-service does not slow a kitchen, it stops it. Most commercial kitchens run one, put everything through it, and have no fallback when it fails.

We are an independent service company and hold no manufacturer warranty agency. That means we are not restricted to one brand, and it also means warranty work needs to go through your manufacturer's appointed agent. If your unit is still under warranty, check that first — we will tell you if it is.

Common combi oven faults and what they usually mean

Combi ovens fail in predictable places. These are the faults that account for most callouts.​

Poor steam output, or no steam at all. The most common combi fault there is, and scale from untreated water clogging the steam generator is the leading cause. Even filtered supplies build up over time, so the generator needs cleaning on a schedule rather than when it fails. Worth checking the water supply is fully on and the filter hasn't passed its replacement date before assuming the worst.

Uneven cooking. Usually the door not sealing. A worn gasket, debris on the seal, or dropped hinges all let heat and steam escape, which also lengthens cook times and stops the oven reaching setpoint. Door seals are a wear part on a replacement schedule, not a breakdown. Blocked or failing fans are the other common cause.

Excessive moisture in the chamber. Usually a blockage in the drainage system rather than too much steam being produced. On Rational units the condensate drain system is a frequent culprit.

Cook times drifting longer. Heating elements or temperature sensors are the usual suspects, though a failing door seal produces the same symptom and is cheaper to rule out first.

Temperature reading wrong, or probe errors. A failed or out-of-range temperature probe is a critical fault — the oven cannot cook accurately without reliable data, and the probe needs replacing before the unit goes back into service. Same applies to core probes used for precision cooking.

Cleaning cycle won't complete. The self-cleaning system is the most water and chemical intensive thing the oven does, and the pump is one of the first components to fail. Usually reported as an error partway through a clean rather than as a pump fault.

No water pressure at the hand shower. The spray-out hose gets pulled, kinked and dragged across hot surfaces all day. Split hoses are among the most common calls we get, and the fix is straightforward.

Oven not filling, part filling, or filling continuously. Usually the water inlet solenoid. Frequently misdiagnosed as a steam generator fault, which is a far more expensive thing to replace.

Blank, frozen or unresponsive display. Steam ingress and heat cycling kill front displays and control panels. A dead panel doesn't usually mean the oven is finished — the cooking side is often perfectly serviceable behind it.

Unusual noise or vibration. Generally mechanical or motor related — the convection fan motor being the common one. A fan drawing excess current or stalling means the oven should be shut down rather than run on.

Unexpected shutdowns. Typically overheating or an electrical fault.

Several unrelated faults at once, or intermittent behaviour. When symptoms don't point anywhere sensible it's often the control board rather than the components it feeds. We replace full PCBs where a board has genuinely failed rather than swapping parts around it.

Water treatment — the fault behind most combi failures

Most combi oven failures we attend are not oven faults. They are water faults that have destroyed the oven over time.

Combi ovens generate steam continuously. Untreated water leaves scale on every heated surface. Scale insulates, elements work harder, the steam generator fails, and the repair bill lands on the oven rather than on the filter that should have been changed.

If you are replacing combi components more than once a year, look at the water treatment before you look at the oven.

Preventative maintenance

Ovens fail during service because nothing checks them between services.

A scheduled maintenance visit covers

  • Door seal condition and replacement where required

  • Descale and steam generator inspection

  • Water filter condition

  • Temperature calibration against actual cavity temperature

  • Element, contactor and electrical checks

  • Fan and motor condition

  • Fault log review, which often shows a developing fault before it becomes a breakdown

Kitchens on a maintenance schedule get fewer breakdowns, and the breakdowns they do get tend to happen on a Tuesday morning rather than a Saturday night.

Installation and replacement

Installation and replacement

We install new commercial ovens and combi steamers, and we work on both gas and electric equipment.

One thing worth being clear about: we carry out all work up to the point of connection. Final gas and electrical point-of-connection installation is completed by a licensed subcontractor we organise, so it is handled as part of the job rather than something you have to arrange separately.

Worth checking before you buy: power supply capacity, gas supply sizing, water pressure and treatment, extraction capacity, and physical access to get the unit into the kitchen. Ovens have been delivered to Hunter venues and found not to fit through the door. Site measurement beforehand is cheaper than return freight.

One trade for the whole kitchen
