Dishes and glassware coming out wet

Almost always rinse temperature rather than a drying fault. A commercial dishwasher does not dry ware with heat or air — it relies on the final rinse arriving hot enough that residual heat flashes the water off as the rack sits. If the rinse is running cool, everything comes out wet no matter how long you leave it.

Usual causes are a failed rinse booster element or thermostat, scale on the booster restricting heat transfer, or insufficient rinse pressure and flow. Worth measuring actual rinse temperature before assuming anything else.

Dishwasher not heating

Wash tank or rinse booster element failure, a thermostat out of range, or a failed contactor. On three-phase machines a single failed element often produces partial heating rather than none, so the machine appears to work but never reaches temperature.

 

Dishwasher tripping the breaker

Frequently an electrical fault rather than a machine fault. Damaged cable insulation, a loose or degraded termination, or a failing element drawing to earth. Repeated resets will keep tripping until the actual fault is found, and testing under load matters — a machine that passes cold can still trip once the heaters call.

This needs proper earth continuity and insulation testing rather than parts substitution.

Poor wash results, or plates coming out dirty

Blocked or worn wash arms and jets, a wash pump losing performance, detergent dosing set too low, or wash temperature not reaching setpoint. Racks loaded too tightly produce the same symptom and are worth ruling out first.

Water leaking from the door or hood

On hood machines, a perished hood gasket, worn guides letting the hood sit unevenly, or tank overfill pushing water over the lip. On door machines, door seals and hinges. All are wear parts.

Machine not draining

Drain pump faults, a blocked drain line, or debris in the tank filter. Commercial kitchens accumulate more solids in the tank than most operators expect, and filters need clearing during service rather than only at close.

Scale build-up

The underlying cause of a large share of dishwasher faults, particularly on rinse boosters. Scale insulates the element, forces it to work harder and eventually kills it. If you are replacing elements more than once a year, the water treatment is the fault, not the machine.
